2 Weeks of Meals in 45 Minutes

So the other day on Facebook I saw a status update from a friend that made me do a double take.  She said that she had made 18 meals for under $100 and in about an hour.

Guys, it was totally legit! I’ve had a few other friends do the same thing right before they have a baby to make meal times easy after the little one arrives. I decided to give it a try too.  I just followed the recipes and advice given in the link from that Facebook status. And now I’m passing it on to you.

Frozen Crock Pot Meals! by Freebies 2 Deals

I didn’t buy anything on sale but I still got 12 meals for about $120 bucks. And they were all assembled during the time it took Abbi to watch one episode of Diego.  I’d say that’s pretty good.

I did one thing differently than the Freebies 2 Deals post did though.  I split each recipe into 2 separate crock bags and zip locks. I knew that each recipe would be enough for two meals for our family. Instead of having left-overs forcing us to eat the same thing twice within a week I split them so we could spread them out a little.

Doesn’t that picture just bring peace to your soul?  Nothing better than seeing dinner taken care of for the next two weeks :)

Crock Pot BBQ Ribs

I’m a fan of BBQ. And my favorite is ribs. Growing up my mom would just boil then grill the ribs. Salt and pepper were the only seasoning and it is the best way to have it, in my own personal opinion.

But here in our apartment, there aren’t any grills.  So what’s a girl that’s craving ribs to do?  Check out Pinterest of course!

I found a really simple, easy recipe.  And by easy I mean you just put them in the crock pot and forget them for the rest of the day.  That’s my kind of dinner.

Easy Barbecued Ribs from Mmm…is for Mommy!

I served it up with some fruit and had one of the yummiest meals I’ve had in a long time.  The ribs were so tender.  I couldn’t even really get them out of the crock pot without the meat falling off the bones.  Really, it was so good you guys.  Go make it right now.  You won’t regret it.

Lime Chicken Fajitas

My husband is obsessed with lime chicken meals.  Every time we go to out to eat he always checks the menu for something lime-y (and then he always gets extra limes and lemons on the side).  So about a month ago while I was cruising Pinterest trying to figure out what to make for dinner I saw this recipe…

Easy, Lime Chicken Fajitas by MADE

I have made it  about 10 times in the few weeks since I discovered it.  We had it 3 times in the first week and a half. I’m not even kidding. It tastes A.MAZ.ING.  And it smells sooo good while it is cooking. And it’s so pretty.

 

For the record – cucumber is my new favorite fajita topping.  Just try it.  You’ll like it (Everybody is singing Yo Gabba Gabba now, right? No? Just me?).

I know everyone loves to see a shot of the final product, but I totally spaced taking one.  It’s a good thing Dana has a gorgeous picture on her blog.

Mac & Cheese

My mom made some mean mac and cheese growing up.  I don’t think I even knew that you could buy it until I was 6 or 7 years old (same with jam – it was a total surprise when I found out you could just hop over to the store to buy it and didn’t have to slave for hours over a hot stove top).  She would put kalbosa sausage on the top.  Everything is better with Kalbosa. Am I right?

However, the hubby is not fan.  He thinks it’s too bland (just for the record – he’s a weirdo).  But I won’t give up.  If I see a recipe that I think might get him on the homemade-mac-and-cheese bandwagon I always give it a try.  I have yet to convert him, but I have found another great recipe to share with you all.

Macaroni & Cheese by Pioneer Woman

It has mustard in it people.  Mustard!  I love mustard!   Other than the mustard, though, it’s very similar to my moms recipe. So delicious.

 

I think next time I’ll try getting the best of both worlds by doing PW’s mustard with my moms kalbosa.  That, my friends, would be heavenly.
